I used to think the only difference between ales and lagers was in the fermentation- the fact that ales use top-fermenting yeast at warmer temps, while lagers use bottom fermenting yeast at colder temperatures. But I also learned that brewers of ales are also usually more experimental than lager brewers by adding additional ingredients (called adjuncts). It’s mostly due to the German Purity law that most lager brewers still follow (they have to if their brewery is in Germany)- this law states that only certain ingredients can be used when making beer- namely malted grains, yeast, hops and water. The law came about in an effort to prevent brewers from using cheaper products to produce their beer, so while it was a great idea when it came out (1516), some people think it has stifled creativity for alot of brewers in Europe who have to follow this law. Farhan and I came up with the techniques to get back up because both of us had times during that week when we lost focus, lost track of improving ourselves, of our goals period. We were still new in the flow of things, and needed some things to get us back on track, back to where we need to be to get better.
